Add mushrooms to the skillet, adding more oil if the pan appears dry. Cook, stirring occasionally, until mushrooms are softened and lightly browned. (5 minutes)

Pour red wine into the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan with a wooden spoon. Continue to cook until the wine has reduced by half. (5-10 minutes)

Add beef broth to the skillet and bring to a boil. Once boiling, reduce heat to low, cover, and simmer until beef is tender. (20-25 minutes)

While the beef is simmering, bring a large pot of lightly salted water to a boil. Add egg noodles and cook according to package directions, until al dente. (5-8 minutes). Drain well.

Stir drained pearl onions into the beef mixture. Cook, stirring occasionally, until onions are heated through. (3-5 minutes)

Remove skillet from heat. Gently stir in sour cream until well combined. Be careful not to over mix or boil after adding the sour cream, as it may curdle. Serve immediately over hot egg noodles.

For a richer flavor, use a higher-quality red wine like Cabernet Sauvignon or Merlot.
To prevent the sour cream from curdling, ensure the skillet is removed from the heat before stirring it in and use room-temperature sour cream.
Garnish with freshly chopped parsley or dill for added freshness.
Beef tenderloin can be substituted for chuck steak, adjust the cooking time accordingly
