For best results, marinate the chicken for at least 2 hours, or preferably overnight, in the refrigerator. This marinade also works well with pork or shrimp. Adjust the amount of hot sauce to your preference. For a milder flavor, use a pinch of cayenne pepper instead. If you don't have dark rum, you can substitute with light rum or bourbon.
