Remove the baking sheet from the oven and allow the pumpkin seeds to cool completely at room temperature. The seeds will crisp up further as they cool. (30 minutes)

For a vegetarian option, substitute the bacon grease with 1 tablespoon of olive oil or melted butter.
The intensity of the cayenne pepper can be adjusted to suit your preference. Start with a smaller amount and add more to taste.
Ensure the pumpkin seeds are spread in a single layer on the baking sheet for even toasting. Overcrowding can result in unevenly cooked seeds.
