Follow The Directions

01

Step
5 mins

In a large, heavy-bottomed pot, combine the diced peaches, red bell peppers, and chopped banana pepper. Add the white wine vinegar, sea salt, and lemon halves. (5 minutes)

02

Step
30 mins

Place the pot over medium heat and cook, stirring frequently to prevent scorching, until the peaches and peppers have softened and released their juices. (Approximately 30 minutes)

03

Step
2 mins

Remove the lemon halves from the pot using a slotted spoon and discard. Stir in the granulated sugar until fully dissolved. (5 minutes)

04

Step
30 mins

Reduce the heat to low and simmer gently, stirring occasionally, until the relish has thickened slightly and the sugar is completely dissolved, creating a beautiful glossy sheen. (Approximately 30 minutes)

05

Step
15 mins

Allow the relish to cool completely before transferring it to sterilized jars. Seal tightly and store in the refrigerator.

For a milder relish, remove the seeds and membranes from the hot banana pepper before chopping.
Adjust the amount of sugar to your preference, depending on the sweetness of the peaches.
Sterilize jars and lids properly before canning to ensure a longer shelf life if you plan to store the relish for an extended period.
The relish will thicken further as it cools.
