Follow The Directions

01

Step

Prepare your smashing station: Place a plate upside-down on a sturdy work surface. (1 minute)

02

Step

Heat the oil: In a large skillet, heat the oil over medium heat until shimmering. (5 minutes)

03

Step

First Fry: Carefully lower the plantain slices into the hot oil. Fry until lightly golden, about 2-3 minutes per side. (6 minutes)

04

Step

Smash the Plantains: Transfer the slightly fried plantains to the upside-down plate using a slotted spoon, reserving the oil in the skillet. Place another plate right-side up on top of the plantains. Gently press down on the top plate to smash the plantain slices to about 1/4-inch thickness. (5 minutes)

05

Step

Second Fry: Carefully return the smashed plantains to the hot oil. Fry until deeply golden brown and crispy, about 2-3 minutes per side. (6 minutes)

06

Step

Drain and Season: Transfer the twice-fried patacones to a plate lined with paper towels to drain excess oil. Sprinkle immediately with sea salt to taste. (2 minutes)

07

Step

Serve immediately and enjoy! (1 minute)

The riper the plantain, the sweeter the patacones will be. Look for plantains with mostly black peels.
For a flavor variation, sprinkle with a pinch of garlic powder or cayenne pepper along with the salt.
Patacones are best served fresh and hot. They can be reheated in a hot oven or air fryer, but they are never quite as good as when freshly made.

Make sure your plantains are really ripe. Mine weren't quite ripe enough, and they were a little hard to smash.
