In a large resealable bag, combine olive oil, 1 tablespoon Dijon mustard, lemon zest and juice, orange zest and juice, garlic, salt, and black pepper. (Prep time: 5 minutes)
Add hens to the bag, seal, and coat thoroughly with the marinade. Refrigerate for at least 1 hour, or up to 4 hours, flipping the bag occasionally. (Marinating time: 1-4 hours)
