Follow The Directions

01

Step

Blanch the Broccoli: In a large pot, bring salted water to a boil. Add the chopped broccoli and cook for 3-4 minutes, or until tender-crisp. Drain the broccoli, reserving about 1 cup of the cooking water. (5 minutes)

02

Step

Cook the Rotini: Return the reserved broccoli water to the pot (add more water if needed to fully submerge the pasta). Bring to a boil and cook the rotini according to package directions, until al dente. Drain, reserving about 1/2 cup of the pasta water. (10 minutes)

03

Step

Sauté the Garlic: While the pasta is cooking, heat the olive oil in the same large pot over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant, being careful not to burn it. (2 minutes)

04

Step

Combine and Toss: Add the cooked pasta and broccoli to the pot with the garlic-infused oil. Toss gently to combine. (2 minutes)

05

Step

Finish and Serve: Add the grated Parmesan cheese and toss again, adding a splash of the reserved pasta water if needed to create a creamy sauce. Season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan cheese, if desired. (3 minutes)

For an extra layer of flavor, add a pinch of red pepper flakes to the garlic while sautéing.
Feel free to experiment with other types of pasta, such as penne or farfalle.
To make this dish even heartier, add cooked chicken, sausage, or shrimp.
Freshly grated Parmesan cheese is highly recommended for the best flavor.
The reserved pasta water is key to creating a luscious sauce, so don't skip this step!
