For the best flavor, use freshly squeezed Key lime juice. Bottled juice can be used in a pinch, but the taste won't be quite as vibrant. Don't overbake the pies! You want the filling to be set but still slightly soft. Garnish with a sprinkle of extra Key lime zest for an extra pop of color and flavor.
