Season generously with salt and pepper. Simmer until the sauce has thickened and most of the moisture has evaporated. (Simmer time: 5-10 minutes). Remove and discard thyme sprigs.

Place the flatbread on a baking sheet and bake in the preheated oven until lightly toasted. (Bake time: 3 minutes). Remove from the oven.

Lightly brush the flatbread with olive oil, leaving a small border around the edge. Sprinkle with crushed red pepper flakes. Spread the tomato sauce evenly over the oiled surface. Arrange the mozzarella slices over the sauce, followed by the remaining whole basil leaves and tomato slices.

Return the flatbread to the oven and bake until the crust is golden brown and the cheese is melted and bubbly. (Bake time: 12-15 minutes). Let it cool slightly before slicing and serving.

For best flavor, use high-quality canned plum tomatoes. San Marzano tomatoes are an excellent choice.
Don't overload the flatbread with sauce and toppings, as this can make it soggy. A light touch is key.
If you prefer a crispier crust, you can bake the flatbread directly on the oven rack. Be sure to watch it closely to prevent burning.
Freshly grated Parmesan cheese is a delicious addition to this pizza.
