In a large pot over medium heat, cook the Italian sausage, breaking it up with a spoon, until browned (approximately 5 minutes). Add the kale stems, carrots, and onion; sauté until softened (approximately 5 minutes).

Pour in the water and lentils; bring to a boil. Reduce heat to a simmer and cook until the lentils are tender (approximately 20 minutes).

Stir in the tomato paste, white vinegar, brown sugar, garlic powder, garam masala, dried thyme, dried dill weed, dried tarragon, and salt. Return to a boil, then reduce heat and simmer, uncovered, until the flavors have melded together (approximately 15 minutes).

Toss in the kale leaves and allow them to wilt into the soup (approximately 5 minutes).

For a vegetarian option, substitute the sausage with 1 (15-ounce) can of cannellini beans, drained and rinsed. Add the beans during the last 15 minutes of simmering.
A splash of lemon juice at the end brightens the flavors.
This soup tastes even better the next day! Store leftovers in an airtight container in the refrigerator.
Serve with crusty bread or cornbread for a complete meal.
