Pour the olive oil into a roasting pan. Place the turkey legs into the oil, turning to coat. Season with salt, pepper, and thyme. Pluck leaves from 3 rosemary sprigs and sprinkle over the legs. Arrange remaining rosemary sprigs around the legs. Dot with butter, sprinkle with garlic, and scatter onion in the pan. (10 minutes)

Roast for 1 1/2 to 2 hours, basting every 20 minutes, until skin is browned and juices run clear. Reduce heat to 300 degrees F (150 degrees C), turn legs over, and roast for 1 hour, basting every 20 minutes. Reduce heat to 200 degrees F (95 degrees C) and roast until golden brown, about 1 more hour. Transfer turkey legs to a platter. (210 minutes)

For the gravy, place the roasting pan over medium heat. Whisk in red wine and brown sugar, scraping up browned bits. Whisk in flour until smooth. Gradually whisk in chicken stock until the gravy simmers and thickens, about 5 minutes. Stir in browning sauce and simmer for 3 to 5 minutes. Serve gravy with turkey legs. (15 minutes)

Ensure the turkey legs are fully thawed before cooking for even roasting.
Adjust the amount of salt and pepper according to your preference.
Basting frequently helps to keep the turkey legs moist and flavorful.
If the gravy becomes too thick, add a little more chicken stock to thin it out.
