Prepare the Tomatillo Sauce: Add tomatillos, cilantro, lime juice, and salt to a blender. Blend until completely smooth. Set aside. (5 minutes)

Sauté the Aromatics: Turn on your Instant Pot® and select the 'Sauté' function. Add olive oil, onion, poblano pepper, and jalapeno. Cook, stirring occasionally, until the onion is softened, about 4 minutes. Add minced garlic, cumin, and dried Mexican oregano; cook for 1 minute more, until fragrant. Hit 'Cancel' to stop the Sauté function. (5 minutes)

Combine and Pressure Cook: Pour the prepared tomatillo sauce into the Instant Pot. Add drained and rinsed hominy, pinto beans, and vegetable broth. Stir well to combine all ingredients. (2 minutes)

Pressure Cook: Close and lock the lid of the Instant Pot. Select the 'High Pressure' setting and set the timer for 20 minutes. Allow approximately 20 minutes for the pressure to build inside the pot. (40 minutes)

Release Pressure: Once the cooking time is complete, carefully release the pressure using the quick-release method, following the manufacturer's instructions. This should take about 5 minutes. (5 minutes)

Serve and Garnish: Once all the pressure is released and the valve has dropped, carefully open the Instant Pot. Ladle the pozole verde into bowls and garnish generously with your favorite toppings, such as chopped cilantro, diced avocado, sliced radishes, lime wedges, and shredded cabbage.

For a richer flavor, roast the tomatillos under the broiler before blending them into the sauce.
If you don't have an Instant Pot, you can simmer this soup on the stovetop for about 45-60 minutes, or until the hominy is tender.
Adjust the amount of jalapeno to your preference for spiciness.
For a vegan version, ensure your vegetable broth is vegan-friendly.
