Shape the dough into a ball and place it in a large bowl lightly greased with cooking spray. Cover the bowl with a towel dampened with warm water and let it rise in a warm place until doubled in size, about 2 hours. (Rise time: 2 hours)

Shape the dough into a ball by pulling the sides under until a smooth, slightly shiny surface develops. Add the remaining 1 cup of water and a steam rack to the Instant Pot. Place the cake pan on the rack. Close and lock the lid, and turn the vent to the 'Sealing' position. Select the 'Manual/Yogurt' setting and set the timer for 1 hour. The dough will rise in the cooker and double in size. Press 'Cancel'. (Cook time: 1 hour)

For a richer flavor, try using a combination of bread flour and a high-quality Italian '00' flour.
