Incorporate the dried red beans, followed by water and bay leaves. Ensure ingredients are well combined, then disable the 'Sauté' function. Secure the lid, ensuring it's properly locked.

Select the 'High Pressure' setting and set the timer for 40 minutes. Allow 10-15 minutes for the pressure to build within the cooker.

After the cooking cycle, allow the pressure to release naturally for at least 20 minutes. Once the pressure is fully released, carefully unlock and remove the lid.

Season generously with liquid smoke, salt, and pepper to your preference. For a creamier texture, mash some of the beans before serving. Serve hot over rice and garnish as desired.

For an even richer flavor, consider adding a smoked paprika or a dash of cayenne pepper to the bean mixture.
Adjust the amount of liquid smoke to suit your taste. A little goes a long way!
If you prefer a thicker consistency, you can remove about a cup of the cooked beans and mash them separately before returning them to the pot.
