Soak the lima beans: Place lima beans in a large bowl and cover with several inches of water. Soak for 8 hours to overnight. (8-12 hours)

Simmer the broth: In a large pot, combine the water, ham bone, and sliced onion. Bring to a boil, then reduce heat to low, cover, and simmer until the onion is tender. (1 hour)

Add beans and seasonings: Drain and rinse the soaked lima beans. Add them to the pot with the ham bone broth. Stir in the brown sugar, Worcestershire sauce, hot sauce, dry mustard, and salt. Cover and simmer until the beans are tender. (2 hours)

Finish the soup: Uncover the pot and continue to simmer the soup until the beans reach your desired tenderness. (30 minutes)

Add ham: Remove the ham bone from the soup. Cut any remaining meat into bite-sized pieces. Discard the bone and return the meat to the soup. Serve hot.

For a richer flavor, consider browning the ham bone in the pot before adding the water.
If you don't have hot pepper sauce, a pinch of cayenne pepper works well.
Adjust the amount of brown sugar and hot sauce to your preference.
Adding a bay leaf or two during the simmering process can add extra depth of flavor.
Consider adding carrots and celery for more vegetables.
Smoked paprika adds a nice touch.
