In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat. Add chopped onion and garlic, cooking until softened and fragrant, about 5 minutes.

While the stew simmers, prepare the couscous: In a separate saucepan, bring 1 3/4 cups water to a boil. Stir in couscous, then remove from heat, cover, and let stand for 5 minutes. Fluff with a fork, season with sea salt to taste, and stir in butter (or vegan butter alternative).

Remove the stew from the heat and stir in lime zest, half of the chopped cilantro, and half of the chopped mint.

Adjust the amount of cumin and coriander to your preference. A pinch of chili flakes can add a delightful kick.
Feel free to substitute other vegetables, such as carrots, bell peppers, or spinach, depending on your taste and what's in season.
