Step

In a large soup pot or Dutch oven, heat over medium-high heat. Add ground beef and chopped onion. Cook, breaking up the beef with a spoon, until the beef is browned and the onion is translucent. (5-7 minutes). Drain off any excess grease.

Stir in the diced tomatoes, beef broth, water, carrots, celery, parsley, bay leaf, salt, chili powder, and dried thyme. Bring the mixture to a gentle simmer, then reduce heat to low, cover, and cook for 3 to 4 hours, allowing the flavors to meld together beautifully.

Add the elbow macaroni to the simmering soup. Cook, stirring occasionally, until the macaroni is tender but still firm to the bite. (8-10 minutes). Remove the bay leaf before serving. Ladle into bowls and enjoy!

For a richer flavor, brown the ground beef in a tablespoon of olive oil.
Feel free to add other vegetables, such as potatoes, green beans, or corn.
If you don't have fresh parsley, you can use 1 teaspoon of dried parsley.
To make this soup in a slow cooker, brown the ground beef and onion first, then transfer to the slow cooker with the remaining ingredients (except the macaroni). Cook on low for 6-8 hours, then add the macaroni during the last 30 minutes of cooking.
Serve with a dollop of sour cream or a sprinkle of shredded cheese for extra flavor.
