Follow The Directions

01

Step

Marinate the Steak: In a large freezer bag, combine the flank steak with 1 tablespoon each of salt and pepper, pressing the seasonings into the meat. Halve the limes and squeeze their juice into the bag, then add the chili powder. Seal the bag, removing as much air as possible, and refrigerate for at least 3 hours to allow the flavors to meld. (3+ hours)

02

Step

Prepare the Grill: Preheat an outdoor grill to medium-high heat and lightly oil the grate to prevent sticking. (5 minutes)

03

Step

Season the Vegetables: In a bowl, toss the bell pepper and red onion strips with a pinch of salt and pepper to enhance their natural sweetness. (2 minutes)

04

Step

Warm the Black Beans: Gently heat the rinsed and drained black beans in a small pot over medium heat until warmed through. Stir occasionally to prevent sticking. (5 minutes)

05

Step

Grill the Steak and Vegetables: Place the steak on the preheated grill and cook for 5-7 minutes per side, until nicely browned. Simultaneously, spray the seasoned vegetables with cooking spray and arrange them in a grill pan. Place the pan on the grill alongside the steak. Cook until the vegetables begin to caramelize, turning them frequently to prevent burning. The steak should be firm and slightly pink in the center, reaching an internal temperature of 140°F (60°C) for medium doneness. (10-14 minutes)

06

Step

Rest and Slice the Steak: Remove the steak and vegetables from the grill. Allow the steak to rest for a few minutes before slicing it thinly against the grain. (5 minutes)

07

Step

Assemble the Fajitas: Warm the flour tortillas according to package directions. Fill each tortilla with a generous portion of warm black beans, sliced grilled steak, caramelized vegetables, and shredded Mexican cheese blend. Serve immediately and enjoy the vibrant flavors! (5 minutes)

For an extra smoky flavor, add a handful of soaked wood chips to your grill while cooking.
Customize your fajitas with your favorite toppings, such as sour cream, guacamole, salsa, or pickled jalapeños.
If you don't have an outdoor grill, you can use a grill pan on your stovetop or broil the steak and vegetables in the oven.
