(5 minutes) Beat in the egg and dark corn syrup until well combined. (2 minutes) Gradually add the dry ingredients to the wet ingredients, mixing until just combined. (3 minutes) Do not overmix. Cover the dough and refrigerate for 1 to 2 hours, or until firm enough to handle. (120 minutes)

Place 1/3 to 1/2 cup turbinado sugar in a small, shallow dish. Shape chilled dough into 3/4-inch balls. Roll each ball in the turbinado sugar, coating evenly. Place the sugared dough balls 2 inches apart on greased or parchment-lined baking sheets. (15 minutes)

Bake for 7 to 10 minutes, or until the edges are lightly browned and the centers are set. (10 minutes) Be careful not to overbake, as the cookies will become dry.

Let the cookies cool on the baking sheets for 1 minute before transferring them to wire racks to cool completely. (60 minutes)

For best results, ensure your butter is properly softened to room temperature before creaming it with the sugars.
Chilling the dough is crucial for preventing the cookies from spreading too thin during baking and also helps to develop the flavors.
Saigon cinnamon offers a more intense and aromatic flavor compared to regular cinnamon; however, regular cinnamon can be substituted if needed.
