Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans. (5 minutes)

02

Step

In a large bowl, whisk together the flour, cane sugar, baking powder, and sea salt until well combined. (3 minutes)

03

Step

In a separate bowl, beat the eggs, 1 cup strawberry puree, 0.5 cup melted butter, and milk until thoroughly combined. (5 minutes)

04

Step

Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Be careful not to overmix. (5 minutes)

05

Step

Pour the batter evenly into the prepared cake pans. (2 minutes)

06

Step

Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. (30-35 minutes)

07

Step

Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely. (10 minutes)

08

Step

While the cakes are cooling, prepare the frosting. In a large bowl, pour 0.25 cup melted butter and sift in the confectioners' sugar. (5 minutes)

09

Step

Add the 4 tablespoons of pureed strawberries (or more as needed) to achieve a smooth, spreadable consistency. Beat until light and fluffy. (5 minutes)

10

Step

Once the cakes are completely cool, frost the top of one cake layer with half of the frosting. Place the second cake layer on top and frost the entire cake with the remaining frosting. (10 minutes)

11

Step

Garnish the cake with fresh strawberry halves or slices and fresh mint leaves. (5 minutes)

12

Step

Chill cake before serving.

For a more intense strawberry flavor, consider reducing the milk by 1/4 cup and adding an additional 1/4 cup of strawberry puree to the cake batter.
Ensure the cakes are completely cooled before frosting to prevent the frosting from melting.
For a decorative touch, use a piping bag to create a border around the top and bottom of the cake.
To prevent the cake from sticking, line the bottom of the cake pans with parchment paper rounds.

The fresh strawberry puree really made a difference in the taste of this cake. It was so much better than using artificial flavorings. My family devoured it!
