For an extra smooth custard, strain the mixture through a fine-mesh sieve before pouring it into the crust. If the crust begins to brown too quickly, cover the edges with aluminum foil or use a pie shield. A slight jiggle in the center of the pie indicates that it is perfectly done. It will continue to set as it cools. Serve chilled or at room temperature.
