Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Lightly coat a casserole dish with cooking spray. (5 minutes)

02

Step

In a large bowl, whisk together the egg whites, Greek yogurt, salt, and pepper until well combined. Pour the mixture into the prepared casserole dish. (2 minutes)

03

Step

Bake in the preheated oven until the egg mixture begins to set, approximately 10 minutes.

04

Step

While the egg base is baking, sauté the sliced mushrooms and chopped onion in a skillet over medium heat until softened, about 5 to 10 minutes. (10 minutes)

05

Step

Remove the casserole from the oven and evenly spread the sautéed mushroom mixture, turkey sausage crumbles, and chopped tomato over the par-baked egg layer. Top generously with shredded Cheddar cheese. (3 minutes)

06

Step

Return the casserole to the oven and continue baking until the eggs are fully set and the cheese is melted and bubbly, approximately 10 to 15 minutes. (15 minutes)

07

Step

Let the casserole cool slightly before slicing and serving. Enjoy immediately, or store in the refrigerator for up to 5 days.

For an extra layer of flavor, consider adding a sprinkle of red pepper flakes or a dash of hot sauce to the egg mixture.
Feel free to customize the vegetables and protein in this casserole to your liking. Spinach, bell peppers, or different types of sausage all make excellent additions.
To ensure even cooking, use a shallow casserole dish.
If you don't have cooked turkey sausage on hand, you can substitute with ground turkey or chicken sausage, cooked and crumbled.
