Once boiling, cover the pot, reduce the heat to low, and simmer until the pasta is cooked and the sauce has thickened slightly, about 10-12 minutes, stirring occasionally to prevent sticking.

Remove the pot from the heat and stir in the grated Parmigiano-Reggiano cheese and Greek yogurt until fully incorporated. (2 minutes)

For a richer flavor, substitute half-and-half or heavy cream for the almond milk, but note that this will increase the calorie content.
Feel free to add other vegetables such as sliced mushrooms, bell peppers, or spinach to the pot along with the pasta.
If you don't have tricolor rotini, any short pasta shape like penne, fusilli, or elbow macaroni will work well.
For a smoother sauce, use an immersion blender to blend a portion of the sauce before adding the cheese and yogurt.
