Follow The Directions

01

Step

Rehydrate the Porcini: Place the dried porcini mushrooms in a heatproof bowl and cover with 2 cups of hot water. Allow them to soak and plump up for about 30 minutes.

02

Step

Strain and Prepare the Mushrooms: Carefully pour the mushrooms and their soaking liquid through a coffee filter or a fine-mesh sieve lined with cheesecloth, set over a bowl. Reserve the soaking liquid – this is liquid gold! Rinse the rehydrated mushrooms thoroughly to remove any grit. Coarsely chop the mushrooms. (5 minutes)

03

Step

Sauté Aromatics: In a large, nonstick skillet set over medium-low heat, melt the butter until shimmering. Add the finely minced garlic and parsley; stir to combine and infuse the butter with their flavors. (3 minutes)

04

Step

Cook the Mushrooms: Add the chopped mushrooms to the skillet. Moisten the mixture with a few tablespoons of the reserved porcini soaking liquid. Cook, stirring occasionally, until the moisture has largely evaporated and the mushrooms are beginning to brown, about 5 minutes.

05

Step

Create the Creamy Sauce: Pour in the heavy cream and dry white wine, stirring to combine everything beautifully. Bring the sauce to a gentle simmer and allow it to reduce slightly, thickening to your desired consistency, about 5 minutes.

06

Step

Season and Serve: Season the sauce generously with sea salt and freshly cracked black pepper to taste. Serve immediately over your favorite pasta, grilled steak, or roasted chicken. Garnish with additional fresh parsley, if desired.

Don't discard the porcini soaking liquid! It's packed with umami flavor and adds a wonderful depth to the sauce. Strain it carefully to remove any sediment.
For a richer sauce, consider adding a tablespoon of mascarpone cheese at the end of the cooking process.
If you don't have dry white wine, you can substitute chicken broth or vegetable broth, but the wine adds a distinctive flavor that complements the mushrooms beautifully.
Adjust the amount of heavy cream to your liking. For a lighter sauce, use half-and-half or milk, but be aware that the sauce will be less rich and may not thicken as much.
Fresh herbs like thyme or rosemary can also be added to the sauce for a different flavor profile.
