In a large bowl, gently combine ground beef, panko bread crumbs, dried onion, dried cilantro, onion powder, garlic powder, salt, and black pepper until just mixed. Be careful not to overmix. (5 minutes)

Finely chop the chipotle peppers in adobo sauce. Add the chopped chipotle peppers, adobo sauce from the can (about 2 tablespoons), and the lightly beaten egg to the meat mixture. Gently mix until everything is evenly incorporated. (5 minutes)

Using a spoon or cookie scoop, roll the mixture into 1 1/2-inch meatballs. (10 minutes)

Heat a large skillet over medium-high heat. Add a tablespoon of oil (vegetable or olive oil). Brown the meatballs in batches, turning as needed, until browned on all sides (about 3-5 minutes per batch). Transfer the browned meatballs to a rimmed baking sheet. (15 minutes)

Bake in the preheated oven until the meatballs are cooked through and no longer pink in the centers, approximately 8-10 minutes. An internal temperature of 160 degrees F (71 degrees C) should be reached. (10 minutes)

For extra flavor, consider adding a tablespoon of Worcestershire sauce to the meat mixture.
If you prefer a spicier meatball, add more chipotle peppers or a pinch of cayenne pepper.
These meatballs can be made ahead of time. Simply bake them and store them in the refrigerator for up to 3 days. Reheat before serving.
Serve these meatballs with your favorite dipping sauce, such as BBQ sauce, ranch dressing, or a creamy cilantro-lime sauce.
To prevent sticking, lightly grease the baking sheet before placing the meatballs on it.
