Follow The Directions

01

Step

Prepare the Chicken: Place chicken breasts between two sheets of plastic wrap. Using a meat mallet, pound to an even 1/4-inch thickness. Season generously with sea salt and freshly ground black pepper. (5 minutes)

02

Step

Bread the Chicken: Place flour in a shallow dish. In a separate bowl, whisk together eggs and water. Spread panko bread crumbs on a shallow plate. Dredge each chicken breast in flour, ensuring it's fully coated. Dip into the egg mixture, then press into the panko bread crumbs, coating both sides completely. Place breaded chicken on a plate. (15 minutes)

03

Step

Make the Mango Cream Sauce: Combine chopped mangoes, softened cream cheese, heavy cream, and mango jam in a blender. Puree until smooth and creamy. Transfer the sauce to the refrigerator to chill and thicken while you cook the chicken. (10 minutes)

04

Step

Cook the Schnitzel: Heat vegetable oil in a large skillet over medium heat. Carefully place breaded chicken in the hot oil, ensuring not to overcrowd the pan. Cook for about 3-4 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C). (15 minutes)

05

Step

Serve: Spoon chilled mango cream sauce over the cooked chicken schnitzel. Garnish with finely chopped shallots and a sprinkle of sea salt. Serve immediately and enjoy! (5 minutes)

For an extra crispy schnitzel, consider double-breading the chicken. After the first breading, dip again in the egg mixture and then the breadcrumbs.
If you don't have mango jam, you can substitute with apricot preserves or a touch of honey.
Adjust the amount of mango jam to your liking, depending on how sweet you want the sauce.
Panko bread crumbs provide a superior crunch compared to regular bread crumbs. If unavailable, you can use regular bread crumbs but expect a slightly different texture.
Be careful not to overcrowd the pan when frying the chicken, as this will lower the oil temperature and result in a less crispy schnitzel. Cook in batches if necessary.
