Follow The Directions

In a bowl, whisk together the minced garlic, jalapeno, cumin, chopped cilantro, lime juice, sugar, and olive oil. (5 minutes)

Transfer the mixture to a zip-top bag, add the flank steak, and marinate in the refrigerator for 1 to 4 hours.(5 minutes + 1~4 hours)

Arrange the chopped heirloom tomatoes, crumbled cotija cheese, and Bibb lettuce leaves on a serving platter. (5 minutes)

Preheat your grill to medium-high heat and place an 8-inch cast iron pan directly on the grill or over a side burner set to medium-high. (10 minutes)

Remove the steak from the marinade, pat it dry, and season with salt and pepper. Grill for 6 to 8 minutes per side, or until it reaches your desired doneness. Let it rest for 5 minutes before slicing into 1/2-inch thick pieces. (20 minutes)

Coat the preheated cast iron pan with non-stick spray. Add the corn, diced red onion, and poblano pepper strips. Sauté for 6 to 8 minutes, or until the corn has char marks and the peppers are tender-crisp. (10 minutes)

Lightly coat the tortillas with non-stick spray and grill each side for about 30 seconds until warm and pliable. (5 minutes)

Immediately place the sliced steak over the corn mixture in the cast iron pan and serve sizzling hot with the tortillas and platter of accompaniments. (5 minutes)

For an extra layer of flavor, consider adding a smoky touch by using wood chips while grilling the steak.
If you don't have a cast iron pan, a regular skillet will work just fine for sautéing the vegetables.
Feel free to customize your fajitas with your favorite toppings, such as guacamole, sour cream, or salsa.
