Engage the 'Sauté' function on your multi-functional pressure cooker (e.g., Instant Pot) and allow it to heat up. Add the olive oil, followed by the diced onion. Sauté until the onion becomes translucent, approximately 3-5 minutes.

Introduce the minced garlic and continue to sauté until fragrant, about 1 minute. Deglaze the pot with red wine, scraping up any browned bits from the bottom. Simmer until the wine has reduced by half, approximately 2-3 minutes.

Incorporate the crushed tomatoes and hand-crushed whole tomatoes. Bring the mixture to a gentle simmer. Stir in the dried basil, oregano, parsley, salt, pepper, red pepper flakes (if using), and the bay leaf. Ensure everything is well combined. (1 minute)

Secure the lid of the Instant Pot, ensuring the vent is sealed. Select the 'Manual' or 'Pressure Cook' function and set the timer for 10 minutes. Allow 10-15 minutes for the pressure to build inside the pot.

Once the cooking cycle is complete, carefully release the pressure using the quick-release method as per the manufacturer's instructions. This should take around 5 minutes. Once all pressure is released, unlock and remove the lid. Remember to remove the bay leaf before proceeding.

Using an immersion blender, carefully puree the sauce to your desired consistency. Alternatively, for a chunkier sauce, you can skip this step or only partially blend it.

For a richer flavor, consider adding a tablespoon of tomato paste when sautéing the garlic. This will deepen the umami notes in the sauce.
Fresh herbs can be substituted for dried, use 3 times the amount.
If you don't have an immersion blender, you can carefully transfer the sauce to a regular blender in batches, being cautious of the hot liquid. Alternatively, leave the sauce chunky.
This marinara sauce is excellent served with pasta, as a base for pizza, or as a dipping sauce for appetizers. It also freezes well for future use.
Taste and adjust seasonings as needed. A touch of sugar can balance the acidity of the tomatoes if desired.
