Follow The Directions

01

Step

In a large bowl, combine the flour, ground almonds, sugar, baking powder, cinnamon, and cloves. (5 minutes)

02

Step

Cut in the butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. (5 minutes)

03

Step

Add 2 of the egg yolks and knead the dough until it comes together into a smooth ball. (5 minutes)

04

Step

Wrap the dough in plastic wrap and refrigerate for at least 1 hour to allow the gluten to relax and the flavors to meld. (60 minutes)

05

Step

Preheat your oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan with the remaining 1 tablespoon of butter. (10 minutes)

06

Step

Press two-thirds of the dough evenly into the prepared pan, covering the entire bottom. (10 minutes)

07

Step

Spread the red currant jam evenly over the dough base. (2 minutes)

08

Step

Divide the remaining dough into several pieces and roll them into 1/3-inch thick strands between your fingertips. (10 minutes)

09

Step

Arrange the strips over the jam in a lattice pattern. Place the last strip along the sides of the pan to form a rim. (10 minutes)

10

Step

Beat the remaining 2 egg yolks and brush them over the lattice and rim, being careful not to get any on the jam. (5 minutes)

11

Step

Bake in the preheated oven for 45 minutes, or until the torte is golden brown. Keep a close eye on it towards the end to prevent it from burning. (45 minutes)

12

Step

Let the torte cool completely in the pan before gently removing it. (60 minutes)

For the best flavor, bake the Linzer Torte 2-3 days ahead of serving. This allows the spices and jam to meld together beautifully.
Serve with a dusting of powdered sugar or a dollop of whipped cream for an extra touch of indulgence.
If you don't have red currant jam, raspberry or apricot jam can be substituted.
Almonds can be toasted lightly for a more intense nutty flavor.

The hint of cinnamon and cloves is just perfect. It's not overpowering, but it adds a lovely warmth to the torte.
