Cook the Soba Noodles: Bring a large pot of lightly salted water to a rolling boil. Add the soba noodles and cook until tender but firm, about 5-7 minutes. Drain and rinse with cold water to stop the cooking process. (5-7 minutes)

Sauté the Aromatics and Vegetables: Heat canola oil in a large saucepan over medium heat. Add the diced onion, minced garlic, and grated ginger. Sauté until the onion is translucent, about 3-4 minutes. Add the shredded carrots, diced red bell pepper, and half of the diced scallions. Cook until the vegetables reach your desired tenderness, approximately 3-5 minutes. (6-9 minutes)

Combine and Toss: In a large bowl, whisk together the soy sauce, peanut butter, sesame oil, sriracha, and brown sugar until the peanut butter is fully incorporated and the sauce is smooth. Add the cooked soba noodles, sautéed vegetables, and sliced cucumber to the bowl. Toss everything together until the noodles and vegetables are evenly coated with the peanut sauce. Stir in the rice vinegar and toasted sesame seeds for added flavor and texture.

Chill and Serve: Refrigerate the noodles for at least 30 minutes to allow the flavors to meld together. Before serving, garnish with the remaining diced scallions and serve with lime wedges for a zesty finish.

For an extra layer of flavor, try adding a splash of rice vinegar to the noodle water while cooking.
If you prefer a spicier dish, increase the amount of sriracha to your liking.
Feel free to customize the vegetables based on your preferences and what's in season. Edamame, bean sprouts, or shredded cabbage would all be great additions.
These noodles can be made ahead of time and stored in the refrigerator for up to 2 days. The flavors will only deepen over time!
