In a separate bowl, whisk together the eggs, Pecorino Romano cheese, salt, and pepper.

Pour the egg mixture into a 6-inch nonstick cake pan. Gently fold in the cooked potatoes and leek, distributing them evenly.

Place the cake pan into the air fryer basket. Cook until the tortilla is golden brown on top and the center is set (no longer jiggles), about 15 minutes. (15 minutes)

Remove the tortilla from the air fryer and let it cool in the pan for 5 minutes before inverting onto a serving plate. (5 minutes)
